When Suez Hardy first looked at the Old Brick Pub, she didn’t just see a building—she saw a story waiting to be retold. In 2019, she began restoring the old pub alongside her son, Sam, of Hardy & Co Construction. Together, they set out to bring new life to this local treasure—preserving its heritage and honouring the craftsmanship of generations past.

“It was a dream of mine to restore it and bring it back to life,” Suez explains. “Not just for us, but for future generations—to give it another chapter.”
That dream came to life the day they started stripping the render from the outside walls. Suez remembers the day they stripped back the old render and uncovered the original blue granite blocks and convict bricks underneath. “The excitement and joy was unforgettable,” she recalls. “It felt like the past was revealing itself to us, trusting us to take care of it.”
Today, the Old Brick Pub isn’t just accommodation—it’s an experience. Guests are welcomed into a thoughtfully styled space that encourages them to unplug, recharge, and relax. This is slow travel at its finest.
Inside, period lighting, antiques, and vintage treasures create a space that tells a story of early Australian settlers, bushrangers, and gold miners. The details are deliberate: Anzac biscuits with real butter, LP records spinning in place of television noise, and a calm atmosphere that invites the imagination to wander. It’s a love letter to the past, written in every room.
For Suez, hosting guests is one of the most rewarding parts of running a local business in the Hilltops. “I love welcoming visitors to our town,” she says. “And I make sure to include treats from around the Hilltops, supporting our incredible local producers and makers.”
That spirit of support and connection runs deep. “We feel like the caretakers of the Old Brick Pub in this next chapter,” she explains. “And the gratitude and pride we’ve received from our local community—people who value our shared heritage—means the world to us.”
When guests step inside, Suez hopes they feel both welcome and inspired. “They love what we’ve done—how we’ve blended old with new, and saved the layers of time.”
Outside the walls of the pub, life is grounded and fulfilling. “We garden, we mow, we weed—and we love it,” she says with a smile.
